Ingredients

tomatoes
, roughly chopped

large cucumbers
, roughly chopped

red bell pepper
, chopped into thin slices

medium shallot

kalamata olives
, pitted and halved

chopped fresh Italian parsley

extra-virgin olive oil

red wine vinegar

feta cheese
, cut into cubes or crumbled (about ½ cup)
Instructions
Toss all ingredients together, except for the cheese, and mix to combine. Add the cheese and mix gently.
