Refreshing Watermelon Juice

Get out your blender for this refreshing watermelon juice! Made with mint and fresh lemon, it can be made as a mocktail or cocktail.

Ingredients

  • 4 cups diced watermelon (preferably seedless)
  • Mint leaves from ½ bunch , or more to taste
  • 1 whole lemon or lime, juiced
  • 2-4 tablespoons sugar
  • ½ cup cold water (or coconut water)
  • ¼ cup Tequila , vodka, white rum or coconut rum, optional

Instructions

  1. Blend all ingredients but water in a blender until smooth. You can strain it using a fine mesh strainer to remove pulp if you like or if you used a watermelon with seeds.

  2. Add water, alcohol and additional sugar until desired consistency and taste is achieved.

  3. Fill serving glasses with ice cubes, then pour watermelon juice. Garnish with small watermelon slice, lemon wedge, or sprig of mint. Serve immediately and enjoy.

Recipe Notes

To make a pitcher, double the recipe. Depending on the size of your blender, you may need to make it in two batches to fit all the melon.
