If you see me holding a sandwich, chances are it will have some kind of cheese in it, because I’m 90% vegetarian. Lately I’ve become especially picky when it comes to any food with meat in it, but there are some dishes that I’m used to that I find hard to resist, and this curried chicken salad is one of them. It’s nostalgic to me because it’s been a favorite ever since I was a child.
Last weekend me and Erez made homemade bagels. Most of the time we don’t fill the bagels with anything because we eat half of the batch as soon as it’s out of the oven, and then put the other half in the freezer so we won’t feel really bad about ourselves. But this time we were stronger, and waited patiently until the salad was ready. We filled our bagels, and indulged. It tasted so good! Best curry chicken salad I had.
How to make curry chicken salad?
Easy! After baking in the kitchen for years, I’m always surprised to find that cooking is so easy compared to baking. It took 15 minutes to make this salad. Or actually, 24 hours, if you count in the homemade bagels.
Start by cooking the chicken with the spices. I like to cut the chicken to small pieces, but you can chop it anyway you like, to chunks or strips. As for the spices, I only use curry powder, turmeric, and ground pepper to keep things simple. The curry gives it all the flavor it needs, so it’s basically chicken salad with curry. Once the chicken is cooked from all sides, transfer to a large bowl, and allow it to cool to room temperature. Add all the other ingredients and mix. The ingredients are simple – mayo, Greek yogurt (plain yogurt is fine too), onion, spices and that’s it.

Best way to eat this salad? Heap a pile of it in a sandwich. It’s delicious with white or whole wheat bread, wraps, ciabatta, baguette, but my absolute favorite is with bagels. It’s the ultimate chicken bagel if you ask me.

Curry Chicken Salad Recipe
Ingredients
Chicken:
- 1-2 tablespoons olive oil
- 1 lb. (450 g) chicken breasts, cut into pieces
- ¾ teaspoon curry powder
- ¼ teaspoon turmeric
- pinch of freshly ground pepper
Salad:
- ½ small onion , finely chopped
- ¾ teaspoon curry powder
- ¼ teaspoon turmeric
- ¼ teaspoon salt
- pinch of freshly ground pepper
- 6 tablespoons mayonnaise
- 2 tablespoons Greek yogurt
- a handful of cilantro or parsley , optional
- optional add-ins: mango chutney , scallions, raisins

Cook the chicken: Heat oil in a skillet over medium heat. Add chicken and sprinkle with curry, turmeric, and pepper. Sauté until cooked through from all sides. Allow to cool completely.

Assemble the Salad: Mix chicken with all the other salad ingredients (no need to cook the onion). Season more to taste if needed. Serve with a green salad, in sandwiches, or my favorite: bagels!
