This five ingredient recipe is the simplest dessert I’ve come up with in a long time! I had some extra ricotta cheese in the fridge and decided to make these cannoli-inspired ricotta chocolate chip pastry squares. These yummy bites of chocolate, sweet cheese, and delicate puff pastry will melt-in-your mouth.

How to make ricotta chocolate chip pastry squares
This easy recipe requires no additional flour or rolling of puff pastry with a rolling pin. Simply set out your frozen puff pastry about 30 minutes prior to assembling these squares. If you don’t have time to let it thaw out, follow the quick thaw instructions on the box. Unroll the puff pastry and cut into 9 squares using a pizza cutter or dough cutter. Transfer the dough squares to a parchment-lined baking pan.
Preheat your oven to 350F/177C. Place about 1 tablespoon of ricotta cheese in the center of each square, spreading it out in an even little circle, staying 1-2cm away from the edge of the square. Brush on the egg wash to the exposed pastry, avoiding the cheesey center. Sprinkle with chocolate chips and sugar. Bake on a parchment-lined baking sheet at 350F/177C for approximately 15 minutes or until golden brown and perfectly flakey.

- 9 Tablespoons (126g) Chocolate chips

Hi Miriam! They are very delicious. Anything you’d pair with cream cheese pastries, you could pair with this instead of chocolate. Sliced strawberries, raspberries, or blueberries would all be delicious. You may have to add sweeteners to the ricotta when you add sour fruits though, just so the flavor balance is good. Caramel would be great too!

Can these be baked and then frozen?

Hello, I’m sure they can although I haven’t tried it. Usually puff pastry already baked holds up fine in the freezer and ricotta cheese can easily be frozen as well. Just keep them in an airtight container in the freezer to prevent crystals from forming on them. I wouldn’t freeze them beyond 2 months. Hope that helps! Happy Baking!
