    Strawberry Gin Refresher

    This strawberry gin refresher recipe was created out of my husband’s latest craving: Hoppy Refresher (hop & citrus carbonated water) from Lagunitas! We buy these waters in 24 packs at Costco and they are the best non-alcoholic, zero sugar summer sipper. I wish I was getting paid to tell you how good they are, but I’m not. I’m just a genuine fan.

    The combination of strawberries and lime is tart and divine. To complement the full fruit flavors, we added gin due to its aromatic flavor profile, but you can omit the gin for a mocktail modification. Hoppy Refresher pairs extremely well with citrus & tart fruits, so we used it to top off these yummy cocktails. Club soda, sparkling water, or ginger ale can be substituted for Hoppy Refresher as well.

    Strawberry Juice and Puree

    Recently, our family went to a local strawberry farm and picked the most incredible berries I’ve ever had in my life. I juiced a few pounds of berries and stored the juice in our refrigerator for some delicious drinks including strawberry lemonade, strawberry sunrises, and these strawberry gin refreshers. If you don’t have a juicer, pureed strawberries in your food processor will work well too. You can strain out the seeds if you prefer a smooth drink.

    Approximately 3 cups of strawberries will yield 1 cup of juice. I usually wash and remove the stems of strawberries before I juice them in my juicer. Store the juice in an airtight container in the refrigerator and use within 3 days for the freshest juice.

    Pureeing 4 medium strawberries in a food processor should net you around 3 oz of strawberry puree.

    Equipment used

    • 1 Highball glass or 2 Lowball glasses
    • Cocktail Shaker
    • Hawthorne Strainer

    How to make a Strawberry Gin Refresher

    1. Fill one highball glass halfway with ice or two lowball glasses halfway with ice.
    2. Add lime juice, honey and strawberry juice (or puree) to a cocktail shaker and stir to combine.
    3. Add gin and ice. Seal the cocktail shaker and shake for about 10 seconds.
    4. Strain the cocktail into the glass of ice. Top with 2 oz of Hoppy Refresher or club soda. Stir. Garnish with strawberries & mint. Enjoy!

    Notes: Leave out the gin and add two more ounces of Hoppy Refresher or club soda for a delicious mocktail.

    Strawberry Gin Refresher

    This delightful summer refresher includes strawberry juice or puree, lime, honey, gin (optional) and club soda or hop water.

    YIELD 1 7 oz cocktail or two 3.5 oz cocktails

    Ingredients

    • 1 ½ Tablespoons lime juice or juice of half lime (large)
    • 1 Teaspoon raw honey
    • 2.5 ounces strawberry juice or 3 oz strawberry puree
    • 2 ounces gin
    • 2 ounces Lagunitas Hoppy Refresher or club soda

    Garnish

    • 1 Strawberry
    • 1 Mint spring

    Instructions

    1. Fill one highball glass halfway with ice or two lowball glasses halfway with ice.

    2. Add lime juice, honey and strawberry juice (or puree) to a cocktail shaker and stir to combine.

    3. Add gin and ice. Seal the cocktail shaker and shake for about 10 seconds.

    4. Strain the cocktail into the glass of ice. Top with 2 oz of Hoppy Refresher or club soda. Stir. Garnish with strawberries & mint. Enjoy!

    Recipe Notes

    Mocktail modification: Leave out the 2 ounces of gin and replace with 2 more ounces of Hoppy Refresher or club soda.

    *If you prefer a sweeter cocktail, add more honey! As is, this recipe is a little tart/sour, just how I like it!
