    Cornflake Marshmallow Treats

    Looking for a quick and easy dessert recipe? These no-bake cornflake marshmallow treats require only 5 ingredients, take less than 10 minutes to make, and are perfect for satisfying your sweet tooth without turning on the oven. They are sweet and chewy, crunchy yet soft, and have an amazing buttery vanilla flavor.

    Cornflake & Rice Krispies Marshmallow Treats

    While no-bake cereal bars have been around for ages, I rarely stop to think about them anymore… That is until this marshmallowy treat caught my eye at a bakery a few weeks ago. The bakery added corn flakes to their rice krispy treats as well as vanilla bean paste (ooh-la-la!) and extra marshmallows. The result was pure childhood magic and the extra marshmallows made them moist, not dry. The cornflakes made them crunchy, not too soft.

    I was so blown away I had to recreate them for you, so here’s my extra marshmallowy version of this elevated classic. Look at that stretchy marshmallowy goodness as I pull apart the cornflake marshmallow treat below…

    5 Ingredients Used:

    • Cornflakes cereal
    • Rice Krispies cereal
    • Marshmallows (mini marshmallows melt quicker)
    • Stick of butter, salted
    • Vanilla extract or vanilla bean paste

    Since there are only 5 ingredients used in this recipe, I like to use quality butter and vanilla bean paste for added depth of flavor. Using salted butter in this recipe tends to cut the sweet slightly and adds extra flavor. You can certainly use unsalted butter if that’s what you have on hand.

    What else can I add to marshmallow treats?

    Sprinkles can be mixed in with the cereal. They also work well to top these bars right after they’ve been pressed into the pan. Mini chocolate chips also work very well to mix in with the cereal. A drizzle of chocolate would look beautiful over the bars as well.

    Instructions:

    1. Melt Butter In A Large Saucepan Over Low Heat.

    Use a 6-quart pot or larger saucepan as this will make stirring much easier when adding the cereal.

    2. Add In Marshmallows And Stir Until Fully Melted.

    Use mini marshmallows for a quicker melt.

    3. Remove From Heat And Stir In Vanilla Extract.

    Once melted, remove the melted butter and marshmallow mixture from heat and stir in vanilla extract or vanilla bean paste.

    4. Add In Cereal And Stir Until Evenly Coated.

    Add in cornflake cereal and rice krispies cereal. Stir. Alternately, use a large bowl to mix everything together if the saucepan isn’t large enough.

    5. Press Mixture Into A Greased or Lined 9×13 Inch Pan.

    Grease or line your pan with parchment paper. I like to use a silicone or rubber spatula for this. Pro tip: use a cupcake liner as a barrier between your hand and the bars to press them down tightly. Let sit to cool for one hour as the marshmallow mixture hardens slightly to set.

    Cornflake Marshmallow Treats

    These no-bake corn flake marshmallow treats require only 5 ingredients and take less than 10 minutes to make. They are sweet and chewy, crunchy yet soft, and have an amazing buttery vanilla flavor.

    Ingredients

    • 4 cups (112g) corn flake cereal
    • 2 cups (60g) rice krispies cereal
    • 16 oz (450g) marshmallows
    • 7 tablespoons (100g) butter, salted
    • 1 teaspoon vanilla extract or vanilla bean paste

    Instructions

    1. Grease or line a 9×13-inch pan with parchment paper. Parchment makes the bars easy to lift out and cut for serving.

    2. Melt butter in a large saucepan over low heat. Use a 6-quart pot or larger saucepan as this will make stirring much easier when adding the cereal.

    3. Add in marshmallows and stir until fully melted. Once melted, remove the marshmallow mixture from heat and stir in vanilla extract or vanilla bean paste.

    4. Add in cornflake cereal and rice krispies cereal. Stir until thoroughly mixed. Alternately, mix everything together in a large bowl if the saucepan is too small.

    5. Pour mixture into prepared pan. Press down to create a flat, even layer of bars. Pro tip: use a cupcake liner as a barrier between your hand and the bars so they don't stick. Press them down tightly. Let sit to cool for one hour as the marshmallow mixture hardens slightly to set. Cut and serve.

    Recipe Notes

    Storing marshmallow treats:

    Wrap each bar tightly with plastic wrap or place leftover bars in an airtight container or Ziploc bag. Store at room temperature for up to a week for maximum freshness.
